..in the thick of the holidays.  You made it through Thanksgiving!  Well done!  Did you eat too much?  My favorite thing out of all the dishes at the table was my husband’s dish of root vegetable casserole.  I think he got it from Ina Garten.  It was amazing!  I would love to make it myself and replace the heavy cream with half and half or even skim milk.  I often find in dishes with a lot of flavors, no one notices the missing calories and fat.  I made a shingled sweet potato dish with Harissa.  It looked pretty, but I wasn’t terribly impressed.

It’s time to start thinking about the Christmas meal, but before that you have to feed your family this week!  I’m here to help you with that.

Definitely going to make this strawberry bread for breakfast!

I still remember the first dish my husband cooked for me when we were newly dating.  I fully expected spaghetti, but instead, my future husband presented a spectacular dish full of flavors and fresh herbs!  Wow!  It’s funny; five years later, I’m still impressed! Chicken, Mushroom, Sage & Brown Butter Casserole

It’s finally getting a bit cold in Florida, so I am ready for some warm soups!  I have an amazing Vegetarian chili recipe that everyone seems to love.  Perfect for Taco Tuesday.

I’m always looking for something new and this recipe seems to hit the mark.  Try it with me and let me know what you think.  Pork and Bok Choy Stir Fry.

Kale and potatoes are in season!  Let’s make a Turkey Sausage, Kale and Potato Soup.  If you’re skeptical, set your hesitation aside; this is super tasty and you don’t need to feel guilty!

After four days of cooking, give yourself a break and eat leftovers.  If there aren’t any leftovers, order a pizza.

Brunch is always an option for weekend meals and you get to knock out two meals in one!  I love to make roasted veggie frittatas.  Frittatas are easy and cheap.  If you have any leftover veggies from your other meals this week, use those!  Just be sure to cook your veggies before using them in a frittata.  A watery frittata is no bueno.  This is a must-read before making your perfect frittata.  I wish I had read this before making my avocado frittata.  Excellent recipe, but I definitely over cooked it.  Serve your creation with sliced fruit and you can give yourself a pat on the back for getting in lots of fruits and veggies this week!
