Since my son watched the movie “Cloudy with a Chance of Meatballs”, he has been obsessed with meatballs. The first time I took him out to lunch and ordered spaghetti with meatballs, out came a plate of spaghetti with one giant meatball on top. As soon as it was placed before him, he yelled “MEATBAAAAAALL”! so loudly that everyone in the whole place turned to look.
It took me no time at all to make these meatballs. I used a lean ground turkey to save on fat and calories. I used pre-shredded parmesan cheese and mixed the ingredients in my stand mixer. It only took me about 5 minutes to roll them into balls. I drizzled them with olive oil and popped them in the oven! (Kids love to roll meatballs, so put them on the task while you switch out the laundry or unload the dishwasher; just be sure to wash their hands afterward)!pub-4561044891259873, DIRECT, f08c47fec0942fa0
I portioned the balls using a cookie scooper (two scoops for each ball) to ensure they cooked evenly.
I asked Mikey if he liked this picture and he immediately said, “No. No one wants to see raw meat”. I decided to post it anyway.
These freeze beautifully! After cooling, pop them in the freezer to use later.
Here are a few ways to use your frozen meatballs:
Toss them into jarred pasta sauce, heat and serve over whole grain pasta. Stuff a few into a hoagie bun, top with sliced provolone cheese and serve meatball subs.
