As homework, projects and performances prevail along with swim practice and meets soon to begin, I’m all ears for suggestions on super quick healthy meals. I made this tasty vegetable side in no time by using frozen bagged cauliflower rice. I’m not usually a huge frozen vegetable fan, despite their convenience. I find they usually result in a “water-logged” version of their crispy, fresh counterparts. In this case, because it’s finely chopped and cauliflower isn’t a watery vegetable, like mushrooms or yellow squash, it roasted beautifully! Obviously, this shaved a great deal of time off my meal preparation! I served with a simple pasta carbonara and still had some daylight left to play with the kids in the garden (psst! That means yard)! Hmmm…I wonder what the British call a garden where vegetables grow…
Parsley and lemon juice are all you need to make this cauliflower rice a quick, delicious and healthy side!
