I had a hard time deciding what this last challenge would be.  I wanted to continue through the full six weeks giving you guys challenges that you can do and eat as opposed to things you can’t do or eat.  I find that telling myself I can’t have something makes me want it even more!  Is this true for you guys too?

As usual, I will be participating in this challenge as well and although I am a big vegetable eater, I am not much of a fruit eater.  I don’t know why.  I like fruit.  Some fruit prep is nearly effortless, such as washing an apple or peeling a banana.  Either way, I choose other things to grab for snacks and somehow never get around to the fruit.

A few things that I will be doing to help myself with this challenge is to have a variety of fruit available and pre-wash all the fruit I buy (except berries, as they will get mushy) and I’m taking an apple on every commute.  What ways can you think of that will make eating 2 servings of fresh fruit easier?  I would love to hear your comments and suggestions!

One serving of fruit = 

  • 1/2 small mango
  • 1 small apple
  • 1 small banana
  • 1 peach
  • 1 small orange or nectarine
  • 1 kiwi
  • 2 clementines or mandarin oranges
  • 2 small plums
  • 16 grapes
  • 12 cherries
  • 3/4 cup pineapple, 
  • 3/4 cup blackberries or blueberries
  • 1/2 of a large pear, grapefruit or papaya
  • 1 cup of cubes of watermelon, cantaloupe or honeydew melon
  • 1 cup raspberries
  • 1 1/4 cup whole strawberries
  • 1 1/2 star fruit (carambola)
  • 1/2 cup frozen fruit

Washed Green Apples

Juices do not count in this challenge because I believe for many reasons, it is important to eat the entire fruit.  I’ve included frozen fruit but, please buy fruits with no added sugars.

Smoothies are a wonderful option for getting in your 2 servings!  Add 1 cup of fresh kale, (currently in season), for a beautiful, healthy smoothie that packs at least one fruit and vegetable serving!  I promise, you won’t taste the kale; you’ll be amazed!
