Pasta carbonara with salad and maybe some diced beets and organic grape tomatoes for the little one since he isn’t a big fan of raw lettuces….yet. Pasta carbonara isn’t the healthiest of dishes, however my family has Italian roots and my husband would be delighted if I served pasta seven days a week. Plus, it’s Sunday and I’m tired and this is easy. To make things a little healthier, I will add some chopped organic carrots and tomatoes to the salad. Sometimes I add a chopped boiled egg. Sometimes I make my own dressing, sometimes not.

For the carbonara I admit, I’m using white pasta. I almost always substitute whole grain pasta but, this is one dish that just doesn’t taste as good without the refined carb. Hey, I never said I was perfect! I use Romano cheese and egg along with a little pasta water for the sauce. I do not use any heavy cream and quite honestly, cream in carbonara is just too heavy for me!
Prescription from a professional: substitute low-fat or skim milk for half-and-half or heavy cream in most recipes. Try using half the butter in an entree, vegetable or side dish. Choose reduced-fat cheese or sour cream to replace the whole fat version.
*something you may not know: kids need to try foods at least 14 times or more before they are able to decide if they like it or not. Get your kids involved in planning and preparing meals and they will be more likely to eat the meals they helped prepare.
