I’ve been listening to this amazing podcast, called “Better Than Happy”, by Jody Moore. Jody is a life coach who happens to be Mormon, but not a Mormon life coach, if that makes sense. If you are not Mormon, do not rule out this podcast. I promise if you begin listening as a Baptist, you will still be a Baptist in the end.
As I was running this morning, I listened to Jody’s most recent podcast called “Editing Your Life”. As many of you know, I have a very busy life with three children who go back and forth to their biological Mom’s home, sometimes with consistency, sometimes not. I also have a three-year-old wild child. Like most families, the kids are involved in various activities.

However, life can be overwhelming at times, to say the least. I’ve been told many times, “I don’t know how you do it.” I have begun to tally this comment in my head as a way to amuse myself. I have received advice that I must simplify my life. This is brilliant advice, but putting that into practice has been difficult for me because I don’t know how.
“Editing Your Life” provided me with so many places to start!!! I LOVE Jody Moore!! As I mulled over her suggestions and tried to think about the things that I can change, I realized that I spend SO much of my time on food. Planning meals, grocery shopping, cooking, making lunches, planning for healthy snacks, looking up recipes and even blogging about food (which I actually love to do).
I don’t want to simplify to the point of eating grilled chicken breast and salad every single day for lunch and rotate three or four meals for dinner each week. That seems incredibly boring, as I love such a wide variety of food!
So, for the next several days, maybe weeks, I am going to develop a Three Week Meal Cycle with optimistically, simple menus. I am going to include recipe sources and weekly grocery lists. I will repeat the three week cycle for three months and, hopefully, by then I will have developed a second Three Week Meal Cycle.
My ultimate goal: To create a workbook, worthy of publishing, that includes a formula and chart for calorie needs, 3 Week Meal Cycles, recipes or “links” to recipes, weekly grocery lists and possibly a list of substitutions. I actually wrote and analyzed menu cycles for my state mental health system for 5 1/2 years, so that part won’t be too difficult. Despite the investment of time this project will require, it is something I am passionate about.
With my background in dietetics, my love of writing, organization and of food, this may be a long, though certainly rewarding project. Hopefully, it will be helpful to others and I will have the added bonus of contributing to society.
I would love for you to send me your favorite “go to” meals! I don’t need the recipe or details, just the recipe title and additional side items will be amazing! I am hoping for fairly simple meals, including crockpot meals, make-ahead dinners and one-pot dishes! I’ll be happy with suggestions for single item dishes as well!
Wouldn’t it be nice to merely consult a beautifully, laminated chart, written by a registered dietitian that tells you what to cook, how to make it and even provides your shopping list for the week?! Why haven’t I done this before?!
