Alright peeps, I’ve only lost about 5lbs. I am happy to see the scale starting to budge because I’ve only seen it budge UP for far too long!! As a dietitian, I already know this low-carb diet works. The challenge for me is to stay on it until I get to my desirable weight, then manage to keep it off without having to be so restrictive. Dietitian or not, we all know this is not healthy at all.
I thought I could just eat vegetables and make it work; unfortunately that’s not the case. I miss bread but, mostly I miss green peas and butternut squash! I made my sister’s insanely delicious oven baked mac & cheese recipe last night and made the mistake of eating one of those crispy little noodles on top. This was a huge mistake because I’m an all or nothing kinda gal. I managed to refrain from devouring my family’s dinner. I sure made it harder on myself though!
pub-4561044891259873, DIRECT, f08c47fec0942fa0I found this 1 net carb per slice bread and although it isn’t anything like a warm piece of bread fresh out of the oven, at least it provides an acceptable vehicle for other stuff. Two positives: I have definitely noticed a significant decrease in my appetite and this experience will show me ways I can tolerate this diet for short periods of time whenever the future me starts expanding!
I’m seriously considering making my own dressing that I can carry in my purse for when I eat out. Wouldn’t it be funny if I bought one of those vintage metal lunchboxes, maybe one with She-Ra: Princess of Power on it and whipped it out at a restaurant? It could be filled with Monk fruit sweetener, homemade salad dressings and coconut aminos.
BTW, if you don’t know who She-Ra was, enjoy your youth and take lots of selfies. You’re going to want to admire them when you are spending the rest of your life trying to look like that again.
