Bangers and Mash

That’s right, my British buds; last night’s Green Chef meal was bangers and mash!  My sweet husband cooked it.  As always, I was elated to have a night off from the kitchen!

Our last Green Chef menu for the week is a Tuna Melt sandwich and I made Tuna Toasties for lunch today!  Really?  I’ve only made tuna toasties once or twice in my life but today, I decided it was a great idea.  I seem to always do something dumb these days.

Ugh. I must have glanced over the recipe cards when the box was delivered and subconsciously had tuna on my mind.  Ah well, I never claim to be perfect.

There seem to be a compilation of factors that got me out of cooking tonight, including the fact that no one would want to eat tuna for lunch and dinner in addition to the matter of the baby being asleep on the beach at 5:40.  Yippeeeeeeeee!

At my 20 year high school reunion, my friends asked if I go to the beach every day.  Often, I find myself annoyed with the sand in all the nooks and crannies that sand can possibly nestle itself into.  I also tire of lugging all the necessary accommodations out to the water’s edge.  When you have kids, you gotta take sunscreen, food, towels, coolers of drinks, food, goggles, food, sand toys and more food.

But, then there are days I feel like I live in paradise.


Ahhhh…..

I swam with the Pompano and scooped up a ton of sand dollars today.

And then the sunset.

Since I knew it was going to be late din dins or a bowl of cereal tonight, I packed a dinner for the little monster.  He ate a peanut butter sandwich on whole grain bread and pickled beets on the beach.

This isn’t so bad…
