Super Easy Curry Chicken Salad

Lunch box solution, dinner fix…breakfast…why not?  Curry chicken salad.  Eat it on crackers, slap it on a sandwich, eat it solo or on an open faced toasty!! Do you love curry?  I do!  It has been on my mind since I saw my friend eating some curry chicken salad from a local deli.  After wiping the drool off my chin, I said to myself, “Self, you need to make some curry chicken salad”!  I made two in case my little monster wouldn’t eat it, but the curry one turned out to be his favorite.  He ate more than I did!
Easy Chicken Salad
Serves 4
A simple and delicious chicken salad so easy to make, it will become a summer staple

Ingredients
  1. 1 Rotisserie Chicken, meat removed from bones, skin and bones discarded
  2. 1/3 cup Hellmann's Canola mayonnaise
  3. 1/2 tsp celery salt
  4. freshly ground pepper
Instructions
  1. Combine all above ingredients in food processor until well combined. Add additional celery salt and pepper to taste.
Notes
  1. If you prefer a chunky chicken salad, roughly chop chicken and combine all ingredients.
  2. For mix-ins, add coarsely chopped walnuts or toasted, sliced almonds, halved grapes, diced celery or your favorite dried fruit.
