Cloudy with a Chance of Meatballs

Since my son watched the movie “Cloudy with a Chance of Meatballs”, he has been obsessed with meatballs.  The first time I took him out to lunch and ordered spaghetti with meatballs, out came a plate of spaghetti with one giant meatball on top.  As soon as it was placed before him, he yelled “MEATBAAAAAALL”! so loudly that everyone in the whole place turned to look. It took me no time at all to make these meatballs.  I used a lean ground turkey to save on fat and calories.  I used pre-shredded parmesan cheese and mixed the ingredients in my stand mixer.  It only took me about 5 minutes to roll them into balls.  I drizzled them with olive oil and popped them in the oven!  (Kids love to roll meatballs, so put them on the task while you switch out the laundry or unload the dishwasher; just be sure to wash their hands afterward)! I portioned the balls using a cookie scooper (two scoops for each ball) to ensure they cooked evenly. I asked Mikey if he liked this picture and he immediately said, “No.  No one wants to see raw meat”.  I decided to post it anyway. Fast and Freezable Turkey Meatballs

Ingredients
  1. 1lb lean ground turkey
  2. 1/2 cup Italian-style bread crumbs
  3. 1/2 cup grated Parmesan cheese
  4. 1 teaspoon onion powder
  5. 1 teaspoon garlic powder
  6. 2 teaspoons parsley flakes
  7. 1 egg, beaten
Instructions
  1. Heat oven to 375°F.
  2. Evenly coat large sheet pan with olive oil.
  3. In large bowl, mix 1 lb lean ground turkey, 1/2 cup Italian bread crumbs and 1/2 cup grated Parmesan cheese. Season with 1 teaspoon onion powder, 1 teaspoon garlic powder and 2 teaspoons parsley flakes. Add 1 egg; mix until well combined.
  4. Shape mixture into 15 balls of 3 tablespoonsful each. Place on cookie sheet.
  5. Bake 20 to 25 minutes or until thermometer inserted in center of meatballs reads at least 165°F. Cool 5 minutes.
  6. Serve with pasta and marinara sauce, or use in your favorite meatball dinner.
Notes
  1. These meatballs freeze well and can be used in many meatball recipes for a quick dinner solution.

Ingredients
  1. 15 frozen turkey meatballs (see turkey meatball recipe @ nutritionbitsandbobs.com)
  2. 1 cup grape jam
  3. 1 cup BBQ sauce
Instructions
  1. Combine jam and BBQ sauce in bottom of crockpot. Add frozen meatballs and toss to coat. Cook on high for 2-3 hours.
  2. Serve as an appetizer or over mashed potatoes or rice.
